As for the holistic health and diet, there are many contradictions regarding the compatibility of products. Among the people is growing concern about diet, and confusion due to the large number of contradictions.
Ayurveda, The ancient science of healing, offers a logical and scientific approach to determine the correct diet based on the individual's constitution. Vata, pitta and kapha; tri-dosha, are the elements that make up the individual constitution. This approach is quite different from the "traditional" idea of a balanced diet, which offers daily have a certain number of products of major groups; meat, dairy products, fruits, grains and vegetables.
According to Ayurveda primary sources, such a scheme is not enough to get us on the path of good health.
In Ayurvedic literature describes five types of eating disorders:
- Quantitative food deficiency. This means malnutrition due to insufficient food intake and also starvation.
- Qualitative food shortages. This includes improper product combinations that lead to depletion, toxic conditions, and a lack of essential nutrients.
- Qualitative and quantitative "overeating". This includes emotional overeating, which can result in obesity and / or high cholesterol, which can lead to hypertension, heart attacks, or paralysis.
- Toxins in food. Some foods and nutritional combinations lead to toxemia and some digestive upsets.
- Products that are not suitable for an individual constitution can cause natural resistance and cause illness.
These five factors are closely associated with the strength of Agni (fire of digestion). There are four types of Agni:
- VISHAMA AGNI. Due to excess Vata dosha, the digestive fire becomes “spoiled”, causing irregular appetite, dyspepsia and gas. Emotionally, this can result from anxiety, insecurity, fears, fears, and from neurological or mental problems.
- TIKSHNA AGNI. The pitta dosha is responsible for this type of Agni disturbance. This can cause increased metabolism, increased acidity, heartburn and hypoglycemia leading to inflammatory diseases.
- MANDA AGNI. Due to excess Kapha, metabolism slows down, overweight, allergies and congestive diseases occur.
- SAMA AGNI. This type of Agni is the result of a balanced Tridosh. A person with this type of Agni can eat almost all types of foods without difficulty. Digestion, absorption and emptying is normal.
Dietitian should be able to see the type of Agni in creating a diet for the patient.
According to Ayurveda, each product has its own taste (rasa), energy of warming or cooling (virya) and taste after digestion (vipak). When two or three different products of different taste, energy and after taste are combined together, Agni can overload, the enzymatic system fails and all ends with the formation of toxins in the digestive system. At the same time, how the state of Agni largely determines whether the products are good or bad, digested, and nutritional combinations are of great importance. When the products are different in taste, the properties of warming or cooling, and post-digestive effects are eaten together, Agni will be slowed down. The food can then stay in the stomach for seven to eight hours. The same products, eaten separately, could well stimulate Agni, digest more quickly and even, help to burn Amu (garbage). Thus, according to Ayurveda, one must eat according to the constitution and eat fruits, starches, proteins and fats separately at different times of the day. Combining products improperly can lead to dyspepsia, fermentation, putrefaction and the formation of gases. This condition, if prolonged for a long time, can lead to toxemia and various diseases. For example, eating bananas with milk can suppress Agni, change the intestinal flora, create toxins and can cause sinusitis, colds, cough and allergies.
Some basic concepts incompatible foods:
Avoid eating milk or yogurt with sour fruits and citrus fruits. Avoid eating fruit along with potatoes or other starchy foods. Fructose (and other sugars) is digested quickly, while starch is a long time. In this case, sugar is not normally digested. Avoid eating melons and other foods together. Melon is quickly digested, and grains and dairy need more time. This combination will upset the stomach. Melons should be eaten separately. You can never cook with honey. Honey is digested slowly when heated above 80 C and its molecules become glue that firmly adheres to the mucous membranes and clogs the thin canals, producing toxins. Unheated honey is nectar. Heated is poison.
Meat and milk are not compatible either simultaneously or separately. They oppose each other and produce Amu. Milk folds in the stomach and requires a lot of time to digest. For this reason Ayurveda advises to drink milk with sour fruits, yogurt, cheese.
Ayurveda insists that the cold water was not taken during or after a meal, because it slows digestion and Agni. Warm drinking water for ingestion, aids digestion. During the meal, you need to properly chew food, to soften it completely mix with saliva. You can finish eating, drinking a glass of Lassi. To do this, mix four teaspoons sour yogurt with two pinches of ginger, cumin powder and half a glass of water.
Only a third of the stomach should be filled with food, one third of the liquid and the third should be left blank. This helps in proper digestion and also provides clarity of mind.
